Origin and Variety
This microlot comes from the Huila region—an area prized for its fertile volcanic soils, high elevation (1,500–1,700 meters above sea level), and ideal coffee-growing climate. Elkin Guzman cultivates several Arabica varietals, and this lot is often based on Caturra, Chiroso, or Colombia, depending on the season. What makes his coffees extraordinary, however, is not only where they grow, but how they are processed.
Processing Method
Elkin is a master of experimental processing, combining traditional knowledge with scientific research. This particular coffee undergoes an anaerobic fermentation, often preceded by a controlled cold fermentation and followed by slow drying on raised beds.
