This microlot comes from Chalatenango, a region that has rapidly gained recognition for producing some of El Salvador’s most exciting coffees. Nestled at 1,600–1,750 meters above sea level, the farm benefits from cool temperatures, nutrient-rich soil, and a slower cherry maturation process that enhances flavor complexity. The lot is made up of Pacamara—a prized hybrid varietal known for its large beans, bold structure, and expressive cup profile.
Processing Method
Rene Martinez uses a natural (dry) process, in which ripe cherries are hand-picked at peak ripeness, then carefully dried on raised beds with frequent turning to ensure even drying and prevent defects.
